Hi. I don't post threads often but felt a need to do so today. I love ShopRite and found out about the store from this forum -- Thanks to Wheatie and all on the SR forum. I drive 15 plus miles to get there. Today was awesome!!!! I have been holding out on buying butter and was wondering if I was ever going to find a price that I was comfortable with...well, today God gave me a little gift. Walked into ShopRite to get the .50 Tortilla chips they had on sale and the Tropicana and what to I see right by the door - Keller's Butter $1.97 for 4 quarters! This is the best price I have paid for OOP. Normally I find an overage at Walmart and buy from there but it is such a hassle, I hate to do it. Well, I am a pretty good cook and my church is always asking me to bake peach cobblers and cakes and other things for bake sales and dinners for quests. With the butter prices, things get expensive. Today I bought 5 and would have asked for a rain check but the SR that I went to seems to be getting funny about giving rainchecks. Like the lady today had to call the manager for the Grande chips to verify they were out and ask permission to give a raincheck. I will go to the other SR where I just tell them when I don't have the storage space for things and they give me a raincheck. Anyway, I wanted to ask experienced cooks/bakers about butter storage - The expiration is Feb. 12 so I will try to keep in the fridge as long as possible. But when I get ready to freeze, how long can you use it after you defrost...what is the new exp, I guess is my question. 2) Have you noticed a difference in the quality once you freeze the butter? What have you used it for after defrosting? Thanks...for those who haven't gone this week they had ShopRite eggs for .67. Of course, I bought one of those for my baking and the Egglands for me (.88)! I freeze butter all the time...I've never noticed a difference in taste after it thaws...HTH!!

I freeze all our butter, it comes out just the same as when it went in. I just pull sticks out from the freezer when I need some.

I never realized you could freeze butter until I read it on this forum. We don't use butter quickly, so when I need it I defrost a stick and leave the rest in the freezer.

Whenever butter is on sale I stock up and freeze. We've never had a problem with freezer burn or anything and I just usually stick the whole box (with the 4 sticks inside) into the freezer. I've kept butter as long as 6 months in the freezer, I'll guess. My sister and I bake tons of cookies for Christmas so that's a time I like to stock up. I am so excited about our new Shop Rite!
