Has anyone any experience with returning something that you used a coupon on? (i.e. the receipt shows quite a number of coupons used) Do the people at Shoppers process the returns?

I returned a bag of Smart Chips that were expiring in two weeks and used a $1 off Q that doubled and still got back the regular price of the item.
Mentioned to customer service that I used a Q and she said it was hard to tell from the receipt because it does not show the name of the product. She also said, that the store gets reimbursed for the coupon and for not to worry about it.
With that being said, you will be refunded for the cost of item. HTH

That was what I thought happens to the coupons. I got the worst ever service and attitude from the Shoppers at my area when i tried to do a return. I'm NOT going there anymore.

I'm sorry you had a bad experience. Is there another store that you can go to? I have 3 different stores in my area.
