| Coffee Cup Cakes-Fab Gifts and so Inexpensive
Hi all! This is a long post so I hope that's ok, but it is so worth it! This is how to make as gifts individual Coffee Cup Cakes as gifts. Kids LOVE to make these and wow so inexpensive. I have made these even just for my pantry when I want a quick, little cake! First, use inexpensive coffee cups that you can get at the thrift stores, or stock up when they have them cheap on the after Christmas sales, etc. (or before!) Ok, it's basically a little cake that your recipient will make in his/her microwave and even has frosting. I know it's long, read it a couple times. Each cup will have: the cup, the dry cake mix, the icing mix, and the directions. Each recipient will need to use from their own pantry a small amount of oil, some cooking spray, one egg white and water. CAKE IN A COFFEE CUP Frosting too! Read all instructions before starting. Twice. ![]() Yes I have made these, many times and also, they are the most fabulous gifts, print out the directions off your computer to tuck in with the cup. You make up a bunch from just one box of cake mix and one box of pudding mix, and have super instant gifts for holiday, birthdays, even get well. This makes 8-9 of these Cups. 1 box cake mix any flavor 1 (4 serving size) instant pudding mix but NOT sugar free, any flavor Microwaveable coffee cups FLAVOR COMBINATIONS - just ideas: Lemon cake-lemon pudding Yellow cake-chocolate pudding Devil's food cake-chocolate pudding Pineapple cake-coconut pudding Butterscotch cake-butterscotch pudding Place dry cake mix and dry pudding mix into a large bowl and blend well with a spoon or whisk. This will be about 4 to 4 1/2 cups dry mix and will make 8-9 coffee cup cake mixes. Be very careful to be sure it's blended REALLY well. Place 1/2 cup of the dry mix into a sandwich bag and tie it off with a twist tie. Continue making packets until your dry mix is used. GLAZE MIX (frosting) 1/3 cup powdered sugar 1 tsp dry flavoring (such as powdered lemonade mix, powdered orange breakfast drink mix, cocoa powder), vanilla powder sold by the coffee flavorings Select the flavoring appropriate to the cake you are making. For the pineapple coconut cake include flaked coconut in a separate bag with instructions to sprinkle it over the frosted cake. Place the glaze mix ingredients into a sandwich bag and tie closed with a twist tie. Label this bag "Glaze Mix" and attach it to the other bag of cake mix. To make into a gift: Select a large coffee cup. Check it to be sure it holds 1 1/2 cups (one and half cups) of water. That way you will be sure it's right. The cup cannot have any metallic paint on it as it will be used in the microwave. Place one baggie cake mix and one baggie glaze mix in each coffee cup. Now attach the following baking instruction to each coffee cup: "COFFEE CUP CAKE" Generously spray inside of coffee cup with cooking spray. Empty contents of large packet (cake mix) into cup. Add 1 egg white, 1 TBSP. oil, 1 TBSP water and mix for 15 seconds, carefully scraping the dry mix off the bottom and being sure it is all mixed. Microwave on full power for 2 minutes-low wattage microwaves may not give good results. At one point it will look like the cake is going to spill over, do not open the door, it will be ok. While it's cooking, place the Glaze Mix into a very small container and add 1 1/2 tsp. water. Mix well. When cake is done, pour glaze over cake in cup. Enjoy while warm. Ok all, that's it! So fun to decorate the tags, etc.! Kids love to make these, both to give and to eat!

Oh also, these are so versatile - if you do bake sales, do these up and attach a picture of one already baked, or for any other fundraisers, to bring to your "groups" (sewing group, crafting group, etc.)!
