Tomatillo salsa. 1. Pick fresh tomatillos from the garden. (or buy them if you need to - but you should grow them because they are supereasy to grow and reseed themselves each year and produce a ton of food) 2. Remove the husks and rinse them so they aren't sticky. 3. chop them up. 4. Add chopped onions, salt and lime juice. And hot peppers if you want. Salt to taste and let sit. The salt will draw out some juice and make it more salsa-ish. 5. Put it on everything. |

There's another Cali chain called El Torito that has the best - hands down - freshly made guacamole on the planet. I think they used the fattiest strip steaks on the planet and tortillas that are packed with lard. Shrimp tacos: 2 tablespoons extra-virgin olive oil 2 garlic cloves, chopped 1 jalapeno or serrano pepper, seeded and finely chopped 1 pound small shrimp, peeled and devined, tails removed Salt and freshly ground black pepper Zest and juice of 1 lime A handful of chopped fresh flat-leaf parsley or 1 tablespoon chopped fresh cilantro, your choice ( I use a little of both) For the shrimp filling, heat a medium nonstick skillet over medium-high heat. Add the EVOO. Add the garlic, jalapenos, then shrimp and cook, stirring constantly, until the shrimp are pink and firm, 3 to 4 minutes. Season the shrimp with salt and pepper, lime zest and juice, and chopped parsley or cilantro. I use soft taco shells, shredded cheese, sometimes avocado slices or sour cream on ours. But you could add your other fave taco toppings too. |

I didnt read through all the posts afterwards but i am going to tell ya about my fav mexican meal...see im from (near) Palisade Colorado and they are world famous for their peaches. we put up (canned) about 4 bushels last year and we are down to our last few...but i have been saing these 2 jars just for Cinco De mayo clorado peaches style... I make fried bread out of packages of the pizza dough mix that you can buy for 50 cents at walmart... SO EASY!!! add 1/2 cup hot water (to activate yeast in mix) and stir it about 20 times then turn it to counter top and knead togethe for 30 seconds or so...and then put your bowl over the top to let irest for 5 minutes...while resting put oil in a 10.5 inch frying pan and get it going on high After oil is ready and hot, divide the dough up into 4 equal parts...take your rolling pin and roll. out as you would a tortillia...after rolling cook them in the oil...1 side for about 30 seconds and the other for a bout hte same. The dough will rise and be the absolute best fried bread you have ever eaten... so dough is done... you have beans, ground beef, lettuce, cheese, tomato, green onion, sour cream to top. then you add the kicker..PEACH Salsa Peaches..for 4 i use 3 whole peaches diced add 2 teaspoon garlic sea salt add 1 chopped up bunch cilantro and a seeded and diced jalapeno VOILA...NAVAJO TACOS! |

Sopaipillas drizzled with honey! ~not sure if this is authentic, but this is an easy "recipe" I learned at a Tex-Mex restaurant I used to work at: Fry flour tortillas, and drizzle with honey. Boom! That's it! Anyone else feel like they're playing the lottery? I just know my name is going to be drawn! ;-) |

Great thread! I love pollo supremo. It's chicken, mushrooms, onions in a spicy white sauce. You then put it on a tortilla with your choice of toppings. I like beans and guac! Oh so good! |
