my son loves nachos.he is 4 so pulling a nacho from a big stack isnt a good idea unless you like a big mess so i make him individual nachos. i take 1 chip and put a little bit of refried beans then a little scoop of meat then sprinkle with cheese and melt so everything sticks together.top each individual nacho chip with a little bit of sour cream.

I make super simple salsa
Can of diced tomatoes juice and all
6-8 cloves of garlic
Tsp of salt
1/2 onion sliced
Tbsp of cumin
Throw it all in a blender and pulse
Add more spices to taste
Chill before serving

One of my fave dishes, and I can't remember the spanish term for it, but it's
grilled fajita chicken, rice, avocado slices, shredded cheese, and pinco de gallo with some cheese sauce over it. Delish!!

OK so I am realizing that our family are not Mexican food eaters because I haven't heard of many of these. My entry for today is fajita cheese crisp from Carlos o'kelly's and I wish I had the recipe.

ok..since most of mexican food that we cook is fried i want to share something a little bit more healthy..today i want to say ceviche..seafood cocktail..
first boil shirmp/jaiva(crab-pla corrected me if im wrong as most of people do it a little diffrent)/actopus dont forget to add cilantro/onion or garlic for flavor
then drain the food but dont toss all the broth as ull need a littl later
once drain ur gone squeeze limes and let it sit for a bout an hour
mean while u might want to cut
cucumbers
onion
fresh cilantro
tomatoes
mix all togethr w the seafood
add clamato
lots of ketchup
the saving brroth and mix
chilled in fridge
once is ready to serve put in a glass w a lemon on side a chips
ohh dont forget a bout ur corona and salud(cheers)
