I love just about any Mexican Food, from seafoods to Fajitas, but standby is always Cheese Enchiladas with a lovely beef sause and a shredded beef tamale. Yum.

My families favorite... Shredded Chicken Taco Salad/Tacos or Fajita Nachos.... I love to make it, but it takes a long while to make.... *This recipe is Gluten Free so feel free to add Gluten if you prefer... Items needed 1/2 lb chicken drumsticks per family member (I have 4 at home so I use 2 lbs)*You can sub white meat if you prefer..We love the taste of dark meat. 2-3 packages of Old El Paso Taco Seasoning Original or Low Sodium*your preference 1 medium yellow onion 1 Green Pepper 1 table spoon diced peppers (Jalepenos or Chile's)* your preference 12-20 corn tortillas quartered Lettuce shredded Tomatoes diced Queso shredded or cheddar *your preference Queso dip (buy in the refrigerated cheese section at most grocery stores) Salt Pepper Sour Cream Mild or Hot Taco Sauce or Salsa * your preference I usually put both on the table Corn Taco Shells (1 box) Add thawed chicken legs to stock pot (I use the smallest one). Cover with water and add salt to water. Boil for 20-30 minutes until meat pulls away from the bone. While boiling meat dice green peppers and onions and put in skillet with a tablespoon of olive oil to sweat. Mix in salt and pepper to onions and peppers. Remove from heat. De-bone chicken if needed and shred using a fork. Transfer onions, peppers and chicken to a larger pan very large sauce pan? Mix in Taco Seasoning and Water (according to package) Use one packet for each lb of chicken cooked. Add Chiles or Jalepeno's and allow to simmer until most of moisture is evaporated. Make sure you stir regularly to keep it from sticking/burning. In a medium sauce pan or deep fryer (your choice) heat canola oil to 350. Take about 10 qtrs of the corn tortilla you cut and fry until crispy. This takes a few minutes so make sure to flip them so they don't burn on one side. If you don't cook them enough they will not crisp but will turn out chewy. Bake your corn taco shells in the oven according to directions. Microwave your queso dip to pour over your salad or tacos Once your corn tortilla chips are done, chicken is simmered and very little liquid remains and taco shells are done... Enjoy!

| My list of favorite Mexican foods is as long as my arm, but the one thing that I could eat every single day is guacamole like we make it at home. Very simple: ripe avocados peeled and squished with a fork dump in as much Pace Picante Sauce as you like add salt to your taste Yummers!

I have started making my own whole wheat flour tortillas (soooooooooooo much cheaper and soooooooooo easy) so my answer is anything with a tortilla! LOL ◦4 cups flour (we use whole wheat) ◦1 tsp salt ◦1/2 cup oil (we use coconut oil) ◦1 cup of water (or left over whey from making cheese or yogurt, yes I make my own yogurt often, saves a ton of money) Mix flour and salt in a bowl; drizzle in the oil while mixing until well blended. Add water: stir until mixed. Knead until smooth – shorter than 5 minutes. (I use my kitchenaid to mix and it kneads with the dough hook) Divide into 10 balls. Cover and let rest for about 5-10 minutes Roll out unto lightly floured surface into 10” roundish tortillas (I can not for the life of me make them round) In ungreased skillet, brown tortillas for 1 minute or so, they will puff a little sometimes so don't worry about that. Then flip and repeat for the other side. Seriously that is it!

Chicken tacos....here at home, the easy simple way is to put your chicken in the crock pot and pour over a jar of salsa. Let that cook together, when the chicken is done, shred up your chicken and make up your tacos. Simple as that! I have used the leftover chicken to make up chicken tortilla soup too. Easy!

All of it! Lol... The mexican restaurant in the place we used to live had Nachos Texanos which was basically nachos with shrimp, steak, and chicken with salsa, guac, cheese, sour cream, etc. all over them. Very yummy!!!

Guacomole. I use 2 cloeves (or 1 if large) minced garlic and about a teaspoon lemon juice per avocado. Add a little salt, mash with a fork. Yum, can never make enough when family comes over.
