| Ricotta cheese
Has anyone ever tried freezing ricotta cheese? Does it come out ok? Most often I use it mixed into pasta dishes and lasagna. It's easy to hide it there but occasionally I make a stuffed pepper appetizer where it is the main ingredient. Would I still he able to use it for this also?

i have never frozen it, but if you flip upside down in your fridge, it will last way longer than the expiration date. something about an airtight seal....

I've frozen it before. The texture isn't always quite right afterwards, so I don't know know about your pepper dish - depends on the texture when it thaws back out, so I wouldn't rely on it. But it definitely works fine in lasagna or other pasta bakes.

I hope it does I tossed 4 in the freezer with out giving it a thought.

I have froze it before without any issues...I just thaw it in refg.--I usually add stuff ie: seasonings ect so I stir it anyways.

I have and never had any issues... Sometimes the consistency isnt the same, but I usually use that one for a pasta dish.

| freezing dairy products
I have used frozen ricotta cheese, cooking cream and cream cheese and it doesn't lose it's flavor. thank goodness for freezers!
