Easy Raspberry Dark Chocolate cookies

preheat oven to 350

1 Duncan Hines Yellow Cake mix
2 eggs
1/2 cup oil
2 T. water

30 fresh raspberries
raspberry jelly or raspberry butter
confectioners sugar
3 T. granulated sugar
1 bar Hershey's Special Dark Chocolate (the ones you find at the checkout lanes)


mix first 4 ingredients well. using a small blender or chopper, pulverize your 30 fresh raspberries and blend in 3 T. granulated sugar...

incorporate your fresh raspberry mixture into your dough and mix well again.

spray oil your cookie sheet.

flour your hands (dough is very sticky) and place tablespoons of dough into your palms and form balls.

place balls on cookie sheet and flatten slightly.

bake for 10 minutes in preheated oven and remove. immediately using the back of a spoon covered in confectioners sugar, make indents into the center of each cookie.

Allow cookies to completely cool on wire rack.

fill center indentions with raspberry jelly or raspberry butter.

Zest Hershey's Special Dark Chocolate over the cookie and raspberry center and serve.

makes approximately 3 dozen
