any good and easy sugar free cookie recipes that anyone knows of?? or any quick sugar free dessert recipes? thank you for your help!

SUGAR FREE SPICE COOKIES

INGREDIENTS:
1 1/4 cups water
1/3 cup shortening
1 cup raisins
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 eggs
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons liquid artificial sweetener
2 tablespoons water
1 teaspoon baking powder
2 cups all-purpose flour
1)Preheat oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
2)In a small saucepan, bring the 11/4 cup of water, raisins, shortening, cinnamon, and nutmeg to a boil. Remove from heat, beat in eggs, one at a time. Dissolve salt, soda, and liquid sweetener into the remaining 2 tablespoons of water; add alternately to the egg mixture, with the flour and baking powder.
3)Drop cookies by teaspoonfuls onto the prepared cookie sheet. Bake for 8 to 10 minutes in the preheated oven. Cool on wire racks.

Chewy and fragrant, you won't even notice it's sugar free!"

Original recipe yield: 4 dozen.

NO BAKE SUGAR FREE CHEESCAKE

Prep Time:15 Minutes

INGREDIENTS:
1 3/4 cups graham cracker crumbs
1/2 cup butter
1/2 teaspoon ground cinnamon
1 (.6 ounce) package sugar free lemon flavored gelatin
1 cup boiling water
1 (8 ounce) package reduced fat cream cheese
2 teaspoons vanilla extract
1 cup frozen light whipped topping, thawed

DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and cinnamon. Mix well and press into the bottom of a 9 inch square pan. Bake in preheated oven for 8 to 10 minutes. Remove from oven and allow to cool.
2.Dissolve lemon gelatin in boiling water. Let cool until thickened, but not set. In a large bowl, beat cream cheese and vanilla until smooth. Blend in lemon gelatin. Fold in whipped topping.
3.Pour filling into crust. Sprinkle top with graham cracker crumbs. Refrigerate over night.

This recipe has no added sugar so it is great for Diabetics

I imagine with the cheesecake you could use any FLAVOR gelatin.....Let me know if you try any of these and how you like them.....my mother is a Diabetic and so i use recipes without sugar when she visits...
