It depends on the coupon. If they are all for $xx off 1 box, then yes you can.

What about if it is a store coupon for save $2 on 5 and a manf coupon for save $1 on 2?

Most stores will allow you to combine manufacturer coupons with the store coupons. Just make sure the store coupon doesn't state manufacturer coupon at the top.

Is it called doubling coupons if you use more than one coupon? Like one coupon per box of cereal?

No. Double coupons is when you use only 1 coupon and the STORE doubles the cents off. For example, at my Shop Rite, I give them a coupon for .75 off, they scan it once, and it takes off .75 and then .75 again. That's what double coupons are.
