| What Can I Do With Mulberries?
We have 2 or 3 (can't remember if the ice storm got it) mulberry trees in our yard. They are the red mulberries. I like to fruit right off the tree, but hate to see all those free berries go to waste. I was looking online and read that they are good dried. My parents got me a dehydrator for Christmas so I might try that. Does anyone do anything else with them? Cooking, canning, etc... Thanks, Callie

Make Mulberry jam. MIL makes this from the trees in their yard; it's good stuff. 8 (1/2 pint) jars Ingredients * 3 lbs mulberries, ripe * 1/2 cup lemon juice * 7 cups sugar * 1 bottle liquid pectin Directions 1 Put berries in saucepan and crush. 2 Heat gently until juice starts to flow. 3 Then, simmer covered, for 15 min. 4 Put into jelly cloth or bag and squeeze out the juice. Measure out 3 cups of juice into a very large saucepan. 5 Add sugar and lemonjuice, mix well. 6 Put over high heat and bring to a boil, stirring constantly. 7 AT ONCE STIR IN THE PECTIN. 8 Then, bring to a rolling boil and boil hard for 1 min., stirring constatly. 9 Remove from heat skim off the foam, with a metal spoon. 10 POUR QUICKLY INTO HOT STERILIZED JARS AND THEN SEAL. This can take some time to set up. Be patient.

A pie sounds good! Mulberry Pie Prep Time: 45 Minutes Cook Time: 45 Minutes Ready In: 1 Hour 30 Minutes Servings: 8 "I experimented with this and found it was well liked in my house. I have mulberries by the ton. Serve with ice cream." Ingredients: 3 cups mulberries 1 1/4 cups white sugar 1/4 cup all-purpose flour 1 recipe pastry for a 9 inch double crust pie 2 tablespoons butter 1 tablespoon milk Directions: 1. Preheat oven to 400 degrees F (200 degrees C). 2. In a large bowl, mix berries with sugar and flour. Place mixture into bottom pie crust. Dot with butter and then cover with top pie crust. Crimp edges, cut slits in upper crust, and brush with milk. Let pie rest in refrigerator for 30 minutes. 3. Bake pie in preheated oven for 15 minutes. Lower oven temperature to 350 degrees F (175 degrees C) and bake for an additional 30 minutes. Remove pie from oven and let sit on wire rack until cool. These sound great! I think I will google and see if I can can (?) mulberry pie filling. I know you can can apple pie filling. I know I could have wrote that to make more sense, but how do you say it? LOL
