What's for Dinner?: 4/20/12

It's a beautiful day here! Plenty of sunshine, but not too hot.

I think we'll have tacos/tostadas tonight. It's always a favorite at our house. I'll need to run to the store for lettuce & avocados, but I have everything else.

Beautiful weather here today also! I'll be sad when summer is officially here, it gets HOT here in TX

Tonight is pizza night, we have eaten pizza every Friday for at least the last 8 years. I think we started the tradition when my oldest daughter was 4. Anyway, we used to buy it but recently I started making homemade. We got a mixer, pizza stone, pizza peel, etc. Tonight will be our first time trying whole wheat dough. I do love homemade pizza, I just miss Friday being my "no cook" day !

Ah, it's finally Friday but I have NO IDEA what we're having for dinner. DD is working so it will be just DH and I. We may go out to dinner, otherwise I will most likely end up making pork chops as I have some in the fridge that I purchased yesterday and just haven't frozen yet...not sure how I'll make them though. Any suggestions?

I also have a ton of fresh cauliflower and zucchini that I picked up at Aldi's yesterday. Maybe some fresh roasted veggies on the side of however the pork chops are cooked!

The last time I made pork chops I just sprinkled them with a packet of Hidden Valley Ranch seasoning packet for dressing/dip. That's l I put on them. I sauteed them till brown on both sides, turned it down and let them go a few minutes uncovered to cook through. EVERYONE loved them. I served with a baked potato and sauteed asparagus and mushrooms and they all said it looked like a meal from a restaurant or a magazine !

That was my first time doing that, usually I do these with pork chops:

Ranch House Pork Chops BIG HIT
Dinner-Pork/Chicken / Ranch House Crock Pot Pork Chops with Parmesan Mashed Potatoes | Real Mom Kitch

Drunken pork chops BIG HIT also , husband home brews beer I use his
Dinner-Pork/Chicken / drunken pork chops ;-)

I also season them with mexican seasonings like garlic, cumin, etc and serve with rice and beans.

I have also sliced up boneless pork chops and used them in a stir fry over noodles or rice. I used Pioneer Woman's recipe for her beef stir fry and just use different meats and different veggies but the same sauce. I use what I get on sale that week. One of my favorite meals, very versatile!

Thanks for the awesome suggestions!!! They all look FANTASTIC! I have a canister of homemade ranch dressing powder/seasoning/packet stuff, do you think that will work instead of a store bought packet? And the drunken pork, YUM! Good thing I bought the jumbo pack of loin chops at Sam's!

Definitely! I've been wanting to make some of that instead of buying the packets I just haven't gotten around to it. Which recipe did you use?

I work for a software company and our main product is a Tax software. The company also provides customer support through Tax season SO tonight is our big After Tax Season party where we let the stress of tax season dissipate. I will be dining on steak and seafood provided by the company at the party!!!

I feel like a "no-fuss" dinner so I'm making a super quick and easy Tuscan Bean soup. We'll have baguette slices topped with olive oil, parmesan and garlic, with it.

We are having salmon, Rice-a-roni and salad. We found some frozen salmon portions that we like from Sam's (that don't come from China!). My husband and I would just have salad but my son will be with us after working hard around our yard so I thought I should add another side!

I make a porkchop casserole - 1c. rice in the bottom of a 9x13 casserole dish, brown the chops and place on top of rice, take a can of golden mushroom soup and a packet of dry onion soup mix - add enough water to make about 3-4 cups then pour over chops and bake til rice is done. So very yummy.

Here is the recipe I use. I do use it as a substitute for the packet in Taco Soup and have never had a problem with it!

Homemade Hidden Valley Ranch Dressing Mix

15 saltine crackers
2 cups dried parsley
1/2 cup instant minced onion
2 tablespoons dry dill weed
1/4 cup onion salt
1/4 cup garlic salt
1/4 cup onion powder
1/4 cup garlic powder
1 tablespoon ground black pepper

Directions:
In a blender puree crackers to a fine powder. Add the parsley, onion and dill. Pulse to almost dust. Pour into a bowl and add the remaining ingredients. Mix well and store for up to 1 year in an airtight container.

to use~ Add 1 and 1/2 heaping T's to 1 cup mayo and 1 cup buttermilk.
Mix well and serve.

Here ya go. This is so incredibly quick, easy and flavorful. Hope you like it.

Tuscan Bean Soup

1 tsp. olive oil
1/2 small red onion, chopped
1 med. rib celery, chopped
1 med. garlic clove, minced
2 cups chicken broth
1 15 oz. can Great Northern Beans, rinsed and drained
1 14.5 oz can diced tomatoes
1 tsp. dried oregano
1/2 tsp. dried thyme
1/4 tsp. crushed red pepper flakes
2 cups fresh spinach leaves
1/3 c. shredded parmesan cheese

In dutch oven, heat oil over med. heat. Cook the onion, celery, and garlic for 4-5 min.

Stir in broth, beans, tomatoes with liquid, oregano, thyme, and red pepper flakes. Bring heat to med.-high then simmer for 20 min.

Stir in the spinach. Simmer, covered for 2-3 min. Sprinkle each serving with parmesan.

I put Turkey Chili in the crockpot before work today. It's cold and dreary here today so it will taste good. Too bad I'm the only one that will eat it! (or not because I really love it so I'll have leftovers to freeze for lunches next week) I'll make tomato soup and grilled cheese for the kids and put the bag of lettuce out for DH to make himself a salad (he's stilll on his Atkins kick).

I Actually worked today, which was awesome! Adult time plus extra cash! Could a girl ask for more?

I busted out the crock pot, so hopefully house smells yummy when I get home!

Slow cooker Chicken Provençal, white rice, and a big ole salad!

Our tacos were great, and my kids practically fought over the last bit of taco meat. Those kind of meals make me very happy! Just pulled chocolate chip cookies out of the oven for dessert and settling in to watch "Hop".
