I am looking for some ideas to put in my DH lunchbox. He is on the go for work. He drives all day.So he is having to grab the items out of the lunch box and eat while driving. I have done the PB&J ,ham, turkey, egg salad, tuna has gotten old. Maybe different ways to do these would be good. I am out of ideas on new different snacks to put in there as well... Any help or ideas would be greatly appreciated.

For my kids' lunches I like to cook a brisket, then shred it for sandwiches. It makes lots of sandwiches & freezes nicely. I cam sometimes find a 10 lb brisket @ Target for 99c/lb! Yum! If he's driving, perhaps u cud put it in a pita pocket bread for easier handling. Dill pickles always make a nice accompaniment to these. In fact, I've even cooked a brisket in a crockpot full of dill pickle juice (u can just dump a whole jar of cheap hamburger dill slices in there) & it infuses the meat with a nice dill flavor. Will think some more about the snacks.... Good luck!

my hubby loves salad. you cold make chicken etc ahaead of time and put dresssing seperate. what about wraps or soup in a thermas?veggies and dip is good, celery with peanut butter, crackers cheese peperoni, veggie pizza is good. would love to know others ideas too. Jello is good. pudding.

I like to use soft taco shells to send cold chicken, cheese, and lettuce with my daughter to school. You can use any roasted/boiled/baked chicken seasoned anyway you like. This is great for left over chicken. I mix a taco seasoning packet with a 16oz container of sour cream to make veggie dip. This is also good to spread on the taco and chicken. My daughter loves hard boiled eggs, cheese sticks. We like hummus and veggies, but driving might not work too well while eating it. Have you switched up the breads on his sandwiches? use bagles, buns, rolls, wheat, white, thins, pretzel bread? Pizza sandwiches are good, use a stiffer bread, spread with pizza sauce, add canadian bacon or pepperoni slices and cheese

Several years ago we bought one of those inexpensive quesadilla makers (maybe $25?) and it's great for breakfast and lunches. It seals everything inside so they're easy to eat on the run, and they still taste pretty good at room temperature as well. Some examples of what we put in them include the expected taco meat and cheese, chicken diced up pretty small then browned and seasoned with taco seasoning and cheese, ham and cheese, even the filling for crab Rangoon works nicely. For breakfast I like to scramble eggs with either sausage or ham and put that inside, sometimes with cheese, sometimes without. The possibilities are endless!

How about Grill cheese can add tomatoes or can add turkey or can leave plain. For snacks you can add ,cheese crackers or peanut butter crackers,you can add pudding cup,cookies,carrot sticks if he likes veggies.

I just made a salad for lunch. Similar to the asian chicken salad at applebee's (slaw carrots, chicken, green onion, almonds and the Kraft toasted sesame dressing). I thought, oh this would be good in a pita pocket and then thought of your post. Then I thought of cheeseburger muffins. There's tons of recipes on all recipes dot com where you add cooked sausage or hamburger and cheese into a basic muffin mix. There is one recipe for pizza muffins too, I made those with my son. We also make eggs in muffin tins. they freeze well too. So you could do a bacon egg and cheese or use canadian bacon or ham. You could do some plain cheese biscuits and slice them and add a slice of ham in them. I make a cheeseball (2 8oz pks cream cheese, ranch seasoning packet, 1/2 c chopped pecans, 1/2 c bacon bits, then roll the ball in extra pecans and bacon bits. I use the left overs for chicken and ham sandwiches. You can also search the web for lunch box ideas and bento box ideas. I've been trying to figure out new things for my 4 yr old (sensory disorder revolving around food, so he's a problem eater). I've found tons of ideas on pinterest.

When my husband used to drive for work we got him a small camping propane cookstove and he took leftovers and heated them up on his lunch break.he would pull off side of the road and eat in minutes. I have heard of other people hooking up a small microwave to their vehicle but idk if thats good idea . You can try egg muffins...get a cupcake tin and spray with pam spray and drop an egg in each cup and bacon bits or sausage bits and shredded cheese and a dash of garlic bake at 350 degrees for 15 min. Rachael Ray also has a neat biscuit that you take a regular biscuit recipe and add bacon bits or chopped sausage and bake then pack a bacon bits gravy for him to pour on it if you want. They are very filling. I always make bean and cheese burritos for long trips or grinders. Mostly we have leftovers though . You could make a pizza sub that he could reheat that would be really good. I think its called stromboli? not sure. You can make macaroni or potato salad as sides to! good luck!

My DD took leftovers the other day and said it was still pretty good. Take a grands biscuit and roll it out then put cheese and hamburger on it (you could substitute almost anything) then flatten another Grands biscuit and put on top. Seal the sides with a fork and cook 10-15 minutes. It was great for supper but wasn't sure how it would do as a leftover for lunch. She said it was still good.

Pimento Cheese ~ yum. ![]() My SO always takes a sandwich of some sort, a banana, a Shamrock Rockin Fuel (protein chocolate milk) and a Nutri-Grain bar. Sometimes in the winter we heat up some soup and put it in a thermos for him, we stick with kinds of soup that he can 'drink' like chicken and stars, tomato, cream of "?" soups to make it easier since a lot of times he doesn't have time to actually stop and enjoy.

How about hard boiled eggs. Put them in the little sanck bags, season with salt and pepper. Put them in his cooler. HTH

Chicken salad with grapes and slivered almonds. Its really good just as a salad or on a croissant. If he's not big on the grapes you could omit them and maybe jazz it up with some cumin for a curried chicken salad.

ahhhh,chicken salad with grapes and slivered almonds that sounds good. I like to make chicken salad with leftover roasted/broiled chicken I have bought at the store.

If I make a big ham for the holiday's I will take some of the leftover ham I don't freeze and make ham salad.
