| Monday 2/20/12 Good Morning, It'll be a nice, sunny 78 today. We're going out to lunch with our SIL's parents who are vacationing in Florida. It'll be so nice to see them again. Since we're having a big lunch, I think dinner will just be sandwiches. That sounds delightful to the cook! ![]() Have a lovely Monday. |

Good morning! We have our first snow day here. The boys are outside playing, but it will be melting soon. I am getting ready to start a new recipe for Bolognese sauce in the crockpot. Seems a good idea for a cold day at home! We'll have spaghetti with Bolognese sauce and some crusty bread. Thinking of trying some brownie batter dip or cake batter dip later to see if the recipes would be good for Aidan's birthday party. We'll have dip with some fruit or graham crackers for dessert (or just an all day snack!). Have a great start to the week! |

Happy Monday...wow April, you got snow...we just had a lot of rain! Tonight, I am planning to use up some cooked chicken with a pasta dish. Will add a tossed salad for a side dish and leftover cookies and sliced strawberries for dessert.

I put a roast in the crockpot at 4:30am, it is still simmering away it should be falling apart tender by the time we eat. I have a small amount of leftover rice and mashed potatoes in the frig to use up. I will make some buttered noodles, biscuits and steamed broccoli/carrots

Snow here this morning as well. We didn't get much but it was enough to cause some pretty horrific traffic accidents - 8 car pile up and 5 car pile up - plus lots of fire and lots of smaller accidents. SO got to go in to work 2 hours late so that was nice. I have no idea what we're having tonight. We had bbq pork ribs last night though and they were delish. Guess I'll go poke around in the freeze to see what I can come up with.Hope everyone is having a great day.

I think it's talapia that's on the menu for dinner tonight. I had gotten some gortons grilled FREE from HT last month, so I'll be trying that tonight with a Knorr side and carrots cooked in the LOL cinnamon butter that I got cheap. Very frugal, yet healthy dinner :-)

Tonight is "mock chowmein" as it has been called since I was little - probably hamburger hotdish to most. Hamburger browned with diced celery, add 1 can each of cream of mushroom and chicken, soy sauce, water, pre-cooked long grain rice. Bake until done. Yummy! Have a super day all!

More homemade pizza for us. Last week's experiment w/ the dough recipe and cold rise wasn't entirely successful. I think I undercooked it by about 2 minutes because the center of the crust was a little doughy. Starting on a cold pizza stone isn't helping either. Tonight I'm going to try a short precook on just the crust and see if that helps. Also w/ be picking up some parchment paper next shopping trip so I can preheat the pizza stone. Rodney |

Here's the recipes: Brownie Batter Dip 8 oz. cream cheese 1/2 c. butter 2-3 c. powdered sugar (varies by desired consistency) 5 tbsp. AP flour 5 tbsp. cocoa powder 3+ tbsp. milk (varies by desired consistency) 1 tsp. vanilla Instructions In a stand mixer, whisk together the cream cheese and the butter. Add 2 cups of the powdered sugar, 1 cup at a time, and 1 tbsp. milk. Add the flour, cocoa powder, vanilla, and 1 more tbsp. of milk if needed. Whisk all until smooth. Add remaining powdered sugar and milk alternately until dip reaches your desired consistency. Cookie Dough Dip makes about 1 1/2 cups 1/2 cup butter 1/3 cup brown sugar 1 8-ounce block of cream cheese, softened 1/2 cup powdered sugar 1 teaspoon vanilla extract 3/4 cups chocolate chips Melt butter in a small saucepan over medium heat. Add brown sugar and whisk until sugar dissolves and mixture starts to bubble. Set aside to cool, and whisk in vanilla. Cream together cream cheese and powdered sugar for 60 seconds. With mixer on low speed, add in brown sugar and butter mixture. Mix until combined. I added the chocolate chips at this time so the mixer could break them up into pieces. You candso that, or just fold in the chocolate chips. Garnish with additional chopped chocolate. |

Ohhh we have been sooo busy! Transmission went out on a vehicle so made for a rough week of getting everyone around plus had 2 birthday parties and a funeral this weekend along with snow and then a hail storm today! Soooo a nice home cooked meal was scrumptious. We had round steak, corn and mashed potatoes.

Well, still having trouble w/ the soggy middle on my pizza even with a short pre-cook on the crust. Did get a nice rise on the crust with the pre-cook though. Next step will be a pre-heated stone and parchment paper so I can slide the pizza onto it. Good thing we like pizza, I'm getting plenty of practice making it and even with the issues, we still like mine better than what's available here in town. Rodney |
