| Low Carb cheap idea help
Does anyone have any yummy cheap low carb ideas main dishes or sides? I've made the low carb stuffed peppers and gonna do low carb meat loaf and cauliflower mash (supposed to be like mashed potatoes) eggs wraps the easy stuff ... We really need to lose weight me about 50-60 lbs dh about 100... Any ideas would be great... Really striving for easy and inexpensive !! Crockpot ideas would be great too as I have 3 little ones and am super busy as I'm sure all mummies are !!! Thanks ladies!

cauliflower mash is awesome. I have used the Phili cooking creme plain and garlic flavors to give it some extra oomph. We also do a lot of stir fry: saute any sliced veggies you have around, add some sliced steak or chicken. Can eat on low carb tortilla if you can eat that. I also did a stirfry last week and added the phili cooking cream garlic flavor and some canned roasted tomatoes. Turned out pretty good

I use ground up porkrinds as breading for breaded steak and use eggwash to get the porkrinds to stick ... we algo get tons of pork ribs the big boneless things they go bogo at our winndixie a lot seasoned with a sprinkle of adobo and bake for about an hour at 350 quick and easy ... I also make lots of omelets with sliced hotdogs or bacon or sausage ... for dessert some cool whip ... we kept it in the freezer to be as close to ice cream as possible ![]() I also found prefrozen grouper at winndixie bogo baked it on some aluminum foil sprayed with store brand pam and sprinkled with garlic salt broil for 10 minutes

I have more just give me some time ![]() I know we did tuna a lot most mayos have no carbs Im thinkin in a crockpot u can probably do a roast with butter and a splash of worcestire sauce ... it might miss the potatoes though Hubby likes to keep blocks of cheese to snack on and pepperonis When he does atkins he tries to keep it under 5 carbs a day super strict and hard on me since there's not much I can make him ... one of his faces is a non breaded chicken cordon bleu ... chicken breast with a slice of ham and cheese inside ... we always buy prepackaged deli meats so we can monitor the carbs Hth

I just bought those zip & steam zip lock bags, threw frozen talapia & fresh veggies in the microwave for about 4 minutes and Viola! I think I'm obsessed with those bags. Tomorrow I'm going to try a arugula (sp?) And egg white omelette. (Yes you can even make eggs in it!) Haha

My biggest suggestion (& what I just did myself) is buy boneless chicken bags, talapia, meats basically & veggies/fruits only. We didn't buy anything processed besides a few pudding cups for my son & dried fruit/cereal for snacks.

Another idea for a dessert, make sugar free instant pudding, let sit two mins,fold in 8oz sugar free cool whip, then freeze , makes a ice cream like dessert , no sugar and low carbs. make a SF instant pie, low carb graham cracker crust 1 sm box SF instant pudding,(any flavor) 1½ cup 1% milk 1 SF coolwhip, thawed but cold( can reserve 1/3 for a topping) mix instant pudding with the milk, add the cool whip, pour into pie crust and chill. |

I seriously had to Google that whole pork rinds thing, I always thought those were the most unhealthy thing you could eat. I'm not sure if I should share those online articles with my mom now or give them to her for mother's day! I don't eat them but that's her guilty pleasure (she runs about 2 miles everyday). This info will make her very happy.

I use pork rinds to bread all sorts of stuff when do low carb. Which we are trying again since dear sweet hubby and I are back on this diet thing. Also, if you have to bread something with a batter, mix in a little soy flour (low carb, but helps hold things together better than just pork rinds) We do Chili Rellanos...without sauce it is lower carb but with a homemade green sauce you are looking at about 7-8 carbs a serving. We do a lot of pork chops fried with broccoli and cheese sauce, and mashed cauliflower. Stir fry is great, and you can make your own sauce pretty tasty, with very low carb. My absolute favorite is pork roast with garlic cream sauce, and then usually a mixed greens or turnip greens. Easy cheap side dish would be sauteed green beans in olive oil with bacon bits....or asparagus grilled with butter and lemon, or zucchini quartered and grilled with soy sauce. Cheapest main meal is normally hamburger patties with bacon & cheese, and served with mushrooms and peppers. I always make sure to include breads and such for the kids, so they are eating healthy, but they still need those carbs. |

I almost forgot, tonight's meal is very basic, and super cheap...zip-lock omelets, and a little salsa. There will be eggs, throw in some frozen bell peppers, black olives, mushrooms, browned breakfast sausage, and cheese. Squish together in the Ziploc and boil for 30 min. total cost for 7 (and each person can put what they like from the ingredients, so picky eaters are happy here also! Ya just have to use a sharpie to know who each one goes to ) about $4, but not everything will be used up.

Being Diabetic, I eat low carb a lot. I'll make carbs for the rest of the family but I usually don't eat them. Here are some things I like in addition to the usual main meal proteins with riced cauliflower or mashed cauliflower for a side: For a quick something sweet, Tamago: 2-3 eggs 1T Splenda (give or take depending on how sweet you like it) Low Sodium Soy Sauce for dipping Mix egg and splenda (or whatever non-sugar sweetener you like). Either boil in a bag or just pour into a pan and flip. Roll up and dip in soy sauce. Deviled Eggs Tuna Salad, Chicken Salad, Turkey Salad (eat on celery, pork rinds or just plain) Snacks: almonds, cheese, pork rinds, dill pickles, salad greens with bleu cheese dressing One of my favorite meals is Pizza made with the Cauliflower Crust. You can also check out Linda's Low Carb Recipes. I've made a few and they have been well received by the whole family.

I'm in love with steamed cauliflower. I made a mock loaded baked potato casserole last night. Even my picky niece LOVED it. So easy to do. I steamed the cauliflower, put in a little coconut milk, little butter, used my immersion blender..a bit of cheese, some bacon and a dash of sour cream or and some chives..then put it in a casserole pan and baked it for like 15 minutes until it was all bubbly. YUM YUM YUM it really hit the spot. I was craving some of that casserole. While it may not the the healthiest, it was certainly miles above the stuff in the deli at the store calorie and most likely fat and carb wise. I use a lot of coconut flour, almond flour and unsweeted flaked coconut. We are trying the GAPS diet. It has made a huge difference in our lives!

One recipe I love to do is Pot Roast. Just put the meat, a packet of dry onion soup mix, 2 cans of cream of mushroom soup and water in a crock pot over low heat for 6-8 hours. It is amazing! Then I serve it with some mashed cauliflower and a low carb veg. The whole family loves it! Also if you grate cauliflower, you can use it like rice for stir-fry or "fried rice" We usually eat a lot of low-carb pitas for everything, especially pizza. Once you toast the pita, it can handle the weight of all the toppings and not become soggy. Makes me feel like I am being naughty and giving into my pizza craving. |

OMG I'm in love with the omelet idea never heard of ziplock bag omelets !!! I also am dying to make that pizza with cauliflower crust!!! Pure awesomeness!!! Thanks everybody for the ideas!!!! Were still doing low carb him more then me!!! He's done great losing about 50lbs... What he's lost I'm slowly finding lmbo!! Need to get back hard core on it we do breakfast ALOT and not just cause it's low carb but b/c we love breakfast !!!! What's the GAPS diet? I'll google it but like hearing first hand personal stories too KWIM?? Thanks again for ALL the fantastic ideas!!! |

Oh and does it matter if you mix/scramble the egg before you put it in the bag? Or do you just crack the egg in the bag and mix that way |

The GAPS diet we found because we had several special needs children that had a variety of physical, emotional and behavioral issues. The theory is that how we feel and act is directly related to what we eat. There is tons of info out there on it. I have to say I feel fabulous when I stick to it strictly. Not so great when I don't! It is a low carb diet. No corn, white stuff (rice, flour, potatoes, sugar), etc. A little over a year ago we began the adoption of 4 of our children (they are siblings) and one was failure to thrive, one had severe outbursts emotionally and also severe rash outbreaks, another was diagnosed with ptsd and another with ocd and adhd. Me..I'm overweight and my husband has a hard time keeping weight on. The great thing about GAPS is that it supports your body to be healthy. I've lost 50 lbs. and feel fabulous. I have Fibromyalgia and I am a diabetic, both which cause pain. The pain is so much better. My baby with failure to thrive is a CHUNK! The rash on my daughter cleared up. The daughter with ptsd is doing fabulous and my other daughter with adhd and ocd is completely off her meds and really doing well. It has been amazing!
