Creative leftover ideas?

Last night, I made a crustless quiche- turkey bacon, cheese and tomato- served with a side of diced, roasted potatoes. Tonight, I put the leftover quiche between toe slices of cibatta bread, grilled it and plated it with a side of fruit salad. Both meals were a hit.

When we have meatloaf, those leftovers usually become the next evening's Shepard pie.

Anyone have any dishes/ dinners you turn into something new for another meal?

I have often taken leftover meat loaf, crumbled it,then added a jarred spaghetti sauce ..Cook your favorite pasta ,add sauce and cheese in layers bake till cheese is melted. salad and rolls complete the meal.

OR... crumble the meatloaf and make chili.

Thought of another one.
Broccoli and chicken casserole

4-5 cups shredded left over chicken
2 pkgs. (10oz) frozen broccoli
2 (10 3/4 oz.) cans cream of chicken soup
3/4 cup mayonnaise
1/2 cup milk
2 tsp. lemon juice
8oz pkg. Pepperidge stuffing mix ( I use 1/2 pkg.)
1 stick melted margarine


Cook broccoli according to pkg. directions. Preheat oven to 350 F.

Layer chicken, then broccoli.

Mix soup ,milk, mayo, and lemon juice, mix well. Spread over chicken and broccoli. Add stuffing over this. Pour melted margarine on top.

Bake for 45 mins or till top is lightly browned

You can also sub the chicken for leftover ham. yummy!

If I make a big pot roast and have left over meat the next day I like to make taquitos. I shred the beef, place the beef in a skillet with a bit of salad or olive oil, add some sliced or chopped green chiles (Ortega green chiles is a good brand), a bit of chopped garlic and onion, if you want you can add a bit of cumin spice to the beef. Saute until hot. Now get your corn (or if you prefer flour) torillas and add some of the beef mixture to each tortilla, roll it up and use a toothpick to hold the tortilla in place. In another pan heat up some salad oil, add the taquitos to the hot oil and fry until a golden brown. I like to serve the taquitos with guacamole, salsa and sour cream. Please make sure to take the toothpicks out before you serve them!

I love leftover ideas! Taquitos is a really good one.

One of the hardest things for me is leftover steak. This week we had leftover carne asada and we made a hobo skillet for Saturday's big breakfast. I also made grillades once with leftover steak and that was good.

I make chicken salad from leftover roasted chicken a lot because we are home for lunch ever day and DD loves chicken salad. I also do a similar thing with left over salmon.

Leftover rice = fried rice.

Leftover taco meat/beans is usually made into a 7 layer dip to have for lunch or weekend snack.

I am also lucky that little bits of leftovers easily turn into meals for DD when DH and I want to have a quiet late dinner!

I made these spicy chicken and cheese empanadas w/ leftover chicken - they were a big hit Spicy Chicken and Cheese Empanada Recipe - Pastelito de Pollo Picante Receta - Pastelillos Recipe

We usually use up leftover roast beef by adding gravy and mashed potatoes to make open faced sandwiches - same goes for leftover turkey or chicken.

I slice up small pieces of leftover pork roasts/loins and make refried rice adding veggies and egg to leftover rice.

Meatloaf becomes sandwiches for lunch.

Leftover spaghetti sauce can be used to make lasagna or meatball subs if you made it with meatballs.

Before I lost my job, most leftovers made my lunch the next day. Saved a fortune over what my co-workers were spending on lunches out.
