Good Morning - Our heatwave broke also and we could use the rain. Picked up more sausage patties and some chicken tenders yesterday at PC. I'm thinking the tenders along with a macaroni salad for tonight. Have a great day all!! |

Tamale pie (aka taco casserole) 1 layer of hashbrowns 1 layer of taco meat (premade, perfect for leftovers!) 1 layer of cheese 1 layer with ketchup and taco sauce 1 layer of 1 can of cream corn 1 layer of mixed up jiffy corn bread mix Bake in the oven according to corn bread directions.

Thanks for the birthday wishes for ds yesterday, we had a good dinner, and the cupcakes turned out great. I made a batch of Betty Crocker gluten free chocolate cupcakes, filled them with vanilla buttercream, iced with chocolate ganache, and put the swirly line on the top - so they looked like Hostess cupcakes. They were delicious! Tonight I will grill salmon, cut up canteloupe, and make a cucumber salad. Have a nice day, cooks. |

Finally, I am making the parmesan chicken spinach roll ups, that were posted here! Planning on baked potatoes, salad and another steamed veggie. Didn't make the rice pudding yesterday, so will try again today, and I bought some delicious SC peaches to top it off...yum yum! Have a good Monday everyone....hoping for our thunderstorms today!

Glad to hear some of you are getting a break from the heat! Tonight, I'm having quinoa and black bean salad with some leftover sauteed beet greens on the side. Zucchini bread for dessert!

I survived the four day long haul at the Dayton Air Show this weekend!! WOO HOO! Tonight's dinner will be easy - hot dogs, burgers and corn on the cob on the grill. Watermelon for dessert.

We had one hot day and now back to overcast, rainy and thunder. We have leftover chicken but I am going to make chili. Now I will just have to organize the fridge to fit everything in. Sometimes I feel like it is a big rubix cube game. Have a great day everyone.

I a trying a new recipe today from Sandra Lee (Semi home made), Crispy orange beef and broccoli with white rice. I hope it as good as it sounds. Dessert will be fruit salad. Have a great day all.

Tonight we are having egg salad on pita bread (my girls think the new goldfish bread is just like pita bread so they are having it on that), pasta salad, pickle slices, and apple pie for desert!
