2+ month expired Pillsbury bread, can I eat it?

First off I am a freak about eating expired things or even leftovers, but for some reason I don't see the problem with this...

I found a can of Pillsbury French Loaf in the fridge that expired in November. The can still "popped" as usual when I pulled the label and it smells completely normal. I am getting ready to bake it to see how it turns out. If it bakes properly, there is no way I could get sick from it is there?

I baked some biscuits that I left out on accident one night and they were totally fine...I ate them...I don't see how this would be very different.

Yes. I've found a can of bread dough/biscuits in the back of my fridge a couple times that were expired and made them without any problems!!

Just may not rise as high bc yeast is a live organism and may have already lost it's ability to rise.
