Question Cottage Cheese instead of Ricotta Cheese in Lasagna

Has anyone used Cottage Cheese instead of Ricotta Cheese in Lasagna?

If so, is there a big taste difference?

OK...I haven't done this but there is no reason I can think of not to. Take the cottage cheese, add an egg or two, some parmesan sprinkle cheese and some parsley. Beat it with electric beaters and it should have about the same consistency as ricotta. My answer to everything Italian is just add more cheese. Good Luck!

I've used both-It's more of a texture than taste difference. Most of the time now I use cream cheese.

I grew up with the cottage cheese version, just straight cottage cheese no egg and to me it is nasty. Once I started cooking it myself I use Ricotta, it is creamery and lighter than cottage cheese IMP.

I use small curd cottage cheese in my baked ziti and no one ever knows unless they ask for the recipe and then they wrinkle their noses and say oh I don't like cottage cheese.

I only use Mozzerella and Parmesan in mine.
Not really a recipe but you just brown the ground beef and chopped onion and add tomato sauce and tomato paste.
Alternate the layers of cooked noodles with sauce, mozzerella cheese and top it off with Parmesan cheese.

Bake and serve or freeze.

I mix the two, half ricotta, half cottage cheese. Saves money and calories and no one notices. A trick my Italian aunts taught me years ago.

I have never thought about using cottage cheese in this. It would be a cost saving to.
ricotta costs so much at all the stores that I have been to

I also use cottage cheese. I use eggs in mine also so it sets up better. I have tried ricotta cheese before and prefer cottage cheese over ricotta plus it is cheaper. Let us know what you use and if you liked it.

I use either one regularly. I usually am adding spinach to the cheese filling in the food processor - once the cottage cheese goes through the cuisinart, there's no curd texture. I used to use it though even when I was hand mixing and I like it just fine.

I have used cottage cheese before. I had to run it thru the blender to make it smoother. I had to do this to trick DH. He is so picky. I do not condone lying to your spouse but when it comes to cooking I am all for making it "look" like you did or did not use something.

I've almost always used cottage cheese. I've tried Ricotta but actually like the consistency and texture when I use cottage cheese.

My mom always uses Cottage Cheese when I got out on my own and started cooking that when I started using both. I do half of both and 1 egg and 1/2 cup of Parmesan cheese. If I don't have any R Cheese I just use cottage cheese.
