Mnkid suggested (thanks) that we should have a spot for our no spend January and recipes for using all of our stockpile ingredients. I was thinking of this as well and cannot wait to see some of these recipes. So what do you have tons of in your stockpile and what are some ways you use it? I plan on starting the thread for January right after Christmas. Thanks! Jenny |

I just thought of one of our favorites and never realized that is using everything from our stockpile! We like to make our own potato bowls like the ones from KFC. I use popcorn chicken, instant mashed potatoes, frozen corn (the ones with a butter sauce are better for this) gravy, and cheese. We each make them how we like them, I actully prefer mine wthout the chicken. Enjoy!!

My favorite easy meal from the stockpile is: 1 can each cream of chicken, mushroom, celery, all mixed with shredded chicken. Spread in a pan and top with stove top stuffing. Bake....you can add some shredded cheese the last few minutes if you want. You can mix veggies in with it or have them on the side. I also like applesauce with it.

I make a chicken stew type dish in the crockpot. You can use canned or leftover chicken. Toss in a can of stewed tomatoes, can of diced tomatoes, can of tomato sauce, can of drained corn, and chicken. We like it with LOTS of black pepper. Sometimes I also add drained canned carrots and potatoes to make it heartier and go further.

I bought cheese on great sales lately with lasagna in mind so I'll be making lasagnas for the freezer with stockpile: ricotta, canned diced tomatoes, mozzarella, parmesan and noodles....The ground beef isn't exactly stockpile though.

I also make a dish we call Chicken Broccoli Braid. Mix leftover or canned chicken, Frozen broccoli that's either thawed or cooked, a handful of cheese, and enough mayo to make it saucy. Add salt & pepper to your preference. Take crescent roll dough and match up the triangles back side to back side, then layer your new large triangles barely over each other. Spoon the mayo mixture on the middle of the dough. Bring the triangle tips over the top and twist. Repeat until all are complete. It looks a little like a braid when you're done. Bake as instructed on the crescent package, maybe a little longer, til brown & cooked through. I know that's hard to understand, it's hard to explain. I had it posted on a blog I used to do. I'll see if I can find the link. It's a neat recipe because you can substitute the meat with pretty much anything, and I'm sure other veggies would be good, too. Ok here's the link. It's my old blog that I haven't updated in over a year, but the recipes are still good.

"1 can chili no beans 2 cups cheese tortilla chips layer in casserole dish, heat in oven. Does not make good leftovers. Serve with lettuce salsa and sour cream. " Sorry to clog up your inter webs with misinformation, but this was from memory. Pretty sad, the actual recipe follows. 3 cups corn or tortilla chips 15 oz can chili with beans 1/2 cup chopped onion 2 cups shredded cheese Chopped lettuce, tomato, olives Heat oven to 400 lightly grease 1-1/2 qt baking dish. layer 1/2 corn chips, chili, onion and cheese, repeat. Bake uncovered about 15 minutes or until hot. Garnish with lettuce tomato and olives. |

Here's another crockpot recipe: Place boneless porkchops or a pork roast Pour 2 cans of your preferred cream soups and about 1 cup of water or broth Pour a box of stuffing mix on top Cook on low for about 6 hours, depending on how thick cut the chops are. I bet this would be good with a can of green beans tossed in, too.

Almost homemade soup. fresh carrot sliced fresh celery sliced a little chopped onion 1 box or 2 or 3 cans chicken broth (stockpile) 1 envelope chicken flavored pasta (Knorr -- or I've been using the Bi-lo survey freebie, just get the chicken flavored instead of the butter, they don't care) chopped turkey (holiday leftovers from freezer) or cooked chicken cook the veggies in the broth until almost tender, add the pasta package and cook until noodles are tender, add turkey or chicken and cook just until meat is hot. Quick, easy and cheap. So glad my DH loves soups. We like a grilled cheese with this. |
