Marinated Cucumbers



Ingredients:

2 tablespoons sugar
1/2 cup rice vinegar
1 cup diced seedless cucumber

Instructions:
1. Whisk together sugar and vinegar in medium bowl until sugar is dissolved. Stir in cucumbers; place mixture in food-safe plastic bag. Close bag securely and marinate in refrigerator 1 hour. Drain cucumbers in large colander; discard marinade.

Makes 1 cup.

silverfox- I do essentially the same thing except the cucumber container lives in my vegetable keeper. I also add no salt Greek Seasoning because we are huge fans. A batch of cucumbers will last about a week. When the container gets low, I take out the old ones, slice the new one and put the old ones back on top. Almost everyone will eat cucumbers marinated like this. By the way, if I run out of rice vinegar I will substitute white vinegar:water solution 1:1.

I use white vinegar for this and add fresh ground pepper--it really offsets the sugar! I also will add sliced white onions and tomato chunks to vary it up! Thought I'd update since summer should make for lots of cheap tomatos and cukes!

This is one of our favorite side dishes. In addition to thinly sliced cucumbers and onions, I use
1/4 cup apple cider vinegar,
1/4 cup water,
1 or 2 garlic cloves minced,
dash of sugar,
teensy bit of olive oil splashed over top. So yummy!

Second day leftovers I add fresh tomato chunks. If all veggies are gone but there's still juice left (highly unlikely!), I add canned sliced beets. Double yum!
