I have made these muffins for many years and thought I would share the recipe. ![]() Oat Muffins 1 1/4 cup flour 1 cup quick oats 1/2 cup sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 2 egg whites 1/2 cup water 1/3 cup veg.oil 1 cup fresh or frozen fruit (chopped/diced) Combine the first 6 ingredients in a bowl. In another bowl,beat egg whites,water and oil. Stir into the dry ingredients,just until moist. Stir in the fruit. Fill paper lined muffin cups or tins(sprayed with Pam) 3/4 full. Sprinkle each muffin with a mixture of 2 Tablespoons sugar and 1/4 teaspoon cinnamon. I just mix up some cinnamon and sugar and sprinkle on whatever I like. Bake at 400* for 18-22 minutes. If you are using frozen fruit do not thaw it before using. You can use any kind of fruit you like and you don't have to chop it up real small. These are also very good without the sugar sprinkled on them,for those that need to watch their sugar intake. I make these almost daily.They are fairly easy to whip up and they tatse great. I make many batches of these at once but I only mix up the dry ingredients and then place them in zip loc bags and store them. That way it is a quick mix, I just pull out the bag of dry mixture and mix up the rest of the ingredients and have fresh muffins in no time. I also bake big batches and freeze them.They freeze very well. I hope you enjoy. ![]() Rebate |

Hi mab171, Sorry I did not see your question. This makes 10-12 muffins depending on your muffin pan and how full you fill them. I just made a double batch to take to my neighbor today as she was feeling a bit down. Hope you like them. Rebate |
