2 cups whole wheat flour 1 tsp baking soda 2 tsp cinnamon 4 eggs 1 1/4 cup brown sugar (packed lightly) 1/2 cup olive oil 3 cups grated carrots 1 cup raisins 1/2 cup crushed walnuts preheat oven to 350. Beat eggs, oil and sugar until mixed. Sift flour, baking soda and cinnamon and add to wet ingredients. Add raisins, walnuts and carrot. For muffins, cook for 20-30 minutes; for cake 45 mins. Toothpick should come out dry when removed. My kids loved these! We omitted the raisins and walnuts. And we only used 1 cup brown sugar. It made 12 muffins perfectly. |

I bet this would also taste good if you substituted the raisins and put in dried cranberries.
