Chef What can I make with a pound of sausage?

I got a great deal on two 1 pound rolls of pork sausage last week - but this isn't something I normally buy - so now I don't know what to do with it. I'm open to any suggestions - thanks in advance!

Brown with salt, pepper and italian spices, add to soup OR add tomato sauce, peppers, onions and serve with noodles. I also serve it like flat meatballs with greens over fettucine alfredo. Also good to add to any chili recipe. All these are great for the coming cooler weather.

saute green pepper and onions with it and add a block of cream cheese with some garlic and italian seasoning and serve it in hollowed out french bread or over texas toast

I use this for my egg bakes. Most egg bakes are pretty flexible - ones that call for bacon or ham you could use this browned instead - very good!

kicked up blackeye peas --- serve over rice --- really stretches the meat

2 cans Bush blackeye peas
2 cans diced or stewed tomatoes
1 lb. cooked and crumbles sausage
1/2 c diced bell peppers
2 cloves garlic diced
1 larg onion diced
2 bay leaves
1/2 tsp oregano
salt, pepper (add hot sauce or put it on the table for each person to add)


Fry and drain sausage, crumble
sautee bell pepper onions and garlic, drain
combine all ingred. in large pot and cook about half an hour

I would make a huge batch of western eggs(sramble eggs, cheddar cheese,. onions, green pepper,and fried potatoes ) Then refrigerate and put in tortillas for breakfast add salsa and/or sour cream to taste. I do this often and if I add all this stuff with about 18 eggs it makes for a quick ,hearty, nutritious breakfast!! It usually lasts 4 of us most of the week!

sausage bread :thawed pizza dough rolled out put on floured cutting board
cook sausage onions n peppers until tender put on rolled out dough add a cup of your favorite spaghetti sauce and 1/2 cup mozarella cheese roll up and tuck ends under cut 3 slits in top of loaf and bake 400 degrees for 20 mins I serve mine with extra sauce on the side.

I like to add it to: shepherd's pie, paella (okay not traditional but still yummy), pizza, calzones and rice dishes to kick up the flavor a notch.

Make sausage cheese balls - roll freeze on wax paper and then toss in a ziplock for yummy breakfast on the go.
1lb. sausage
4 cups bisquick
3 cups of cheese (or however much you want to add)
pinch of cayanne (if you want them to have a kick)
enough milk to make moist
Brown sausage, drain and then mix with other ingredients. Roll into balls, cook on 350 degrees for about 15 - 20 min. or until lightly browned.
I make these and then freeze them - we have them for holiday mornings and quick breakfasts.
