Question coconut meringue pie,... why does meringue separate?!

Hey

Every time I make a coconut meringue pie, the meringue separates from the pie after a few hours in the fridge and it's weeping.

I was told I should try to let the pie cool off completely before I put it in the fridge but this didn't help either.

The pie still tastes great but it doesn't look so nice

Any tips?!?!?!!?

Oh, by the way... I do not use cream of tartar since I don't like the taste at all!

looking at baking911.com homepage There is a section on How to make meringue. It will give you more information then you ever wanted to know about meringue.

Well, that link above popped in when I typed baking911--actually I found that site by going to Info.com - Search the Web and typing " why does meringue separate?" The exact answer was in the list of sites. WheN I pushed the above link I couldn't find the meringue answer.

Thank you ...! I looked up some tips online but I would love to hear also from somebody who's meringue pie comes out perfect all the time (not like mine haha)

when applying the meringue to the pie, start from the center and spread out to the edges, make sure you are browning it long enough in the oven, I have noticed that if I don't leave the meringue in the oven long enough that it pulls back form the sides

I use a store bought crumble crust (we like crumble crust best). You know, I thought I let it brown enough already, but I might be wrong. And maybe the meringue doesn't stay as well because the pie crust isn't high enough?!
I know it's just a pie...but it is really bugging me
