I make our own pancake mix as well as a few other mixes. Pancake Mix 3-1/2 cups of whole wheat flour 3-1/4 cups white flour 3/4 cup sugar 1 TBSP baking soda 1 TBSP salt In a large bowl, mix all the ingredients together thoroughly. Store in an airtight container. To Make The Pancakes 1-1/2 cups of mix 1-1/2 cups of buttermilk 1 egg 2 TBSP melted butter or vegetable oil In a medium bowl, combine all the ingredients thoroughly and whisk until no lumps are visible. Cook on a hot, greased griddle until browned on both sides. Makes about 12 pancakes. Syrup 1 cup brown sugar, firmly packed 1 cup sugar, (regular white granulated) 1 cup water 1 teaspoon maple extract Combine both sugars and water in a small saucepan. Bring the mixture to a boil and cook for 2 minutes. Be sure to stir it so it doesn't stick. Remove from the heat and stir in the maple extract. Allow to cool before serving. Makes about 2 cups of syrup. You can refrigerate any leftovers. |

| Since I mix in Whole Wheat flour, they aren't really fluffy like reg. pancakes, but they do puff up.

You can use regular milk. The children just like the buttermilk version better. If you don't have buttermilk but you have milk that is just a day or two past the "good by" date... use it... works just as well. |

Here's an awesome raspberry syrup! 2 pints of fresh raspberries 3 cups of sugar 2 cups of water Boil ingrediants until syrup thickens, or until consistency desired. Allow syrup to cool, refridgerate for up to one week. This is great on pancakes, waffles, ice cream, white cake. . . |

If you love cheesecakes, the best thing I've found for raspberry cheesecake is the Polymer's all fruit spread, seedless raspberry. Before you bake your cheesecake, drop 6 large spoonfulls of the fruit spread on top of the cheesecake. Run a sharp knife through the jelly, and if you do it just right you will have 6 hearts on top of your cheesecake! PERFECT for Valentine's day! The jelly is about $5 a jar, but well worth it! I make white chocolate raspberry cheesecakes for most of the holiday's and it is by far one of my favorites! |

I will also use muffin mix to make pancakes too, alot of times you can get the mix cheap or even free sometimes.
