Southern Potato Salad

Peel and cube desired amount of potatos, boil until soft. Rinse cooked potatos with cool water and drain.

Chop red pepper, carrots, celery, boiled eggs and pickles. toss into the potatoes. Add enough equal parts of mayo and mustard until you reach the desired moistness. Stir in some celery seed, just a pinch of garlic salt and paprika. A lot of people serve this warm, but I like it chilled.

Good tip for cooling and seasoning the potatoes, making it unnecessary to rinse the potatoes in order to cool them, which can sometimes make them come apart: After draining, spread potatoes onto a cookie sheet in as close to a single layer as you can get. Sprinkle with whatever dry seasonings you are using (I use salt, pepper, onion powder and celery seed or Nature's Seasons which is a really good blend of all of the above +) and allow to cool. Also, for a little extra zing, add 1-2 T. of prepared horseradish (also works well in deviled eggs). After mixing, sprinkle with dill weed and paprika.

~~Apennysaved1 - I use both dill and sweet salad cubes together but either will work just fine. That's one of the great things about potato salad...it's easy to adjust to your personal taste.
