| Bachelor Chicken
My Hubby loves this dish so much, he's always inviting the guys in the neighborhood who are on their own for whatever reason to come to our house for "Bachelor Chicken." Bachelor Chicken 4 skinless, boneless chicken breasts 4 skinless drumsticks 4 skinless thighs 1/2 to 1 cup flour 3 TBSP butter 1 envelope dried onion soup mix Preheat oven to 350 degrees Melt butter and spread in bottom of casserole dish. Shake dried onion soup mix over butter and stir to mix. Shake chicken pieces in flour in plastic bag to coat. Place chicken in onion soup mixture and turn so that chicken has onion soup mixture on both sides. Cover with foil and bake for an hour to an hour and a half til chicken is golden brown. (Be sure to scrape up crispy bits from bottom of casserole dish -- delicious!) Serves 6 |

Tried this tonight......OMG.....delicious!!!!!!!!!!!!!!!!!!!! !!!!! I used an envelope of dried FRENCH onion don't know if that makes a difference or not. My DH raved about it!!! Thank you rainydays!!

Ok this might be a really stupid question, but... do you mean that you wrap each individual piece with foil or just put foil as a "lid" on the casserole dish? Also, have you done this with skin-on chicken?

| Not a stupid question at all, EmsCakes. I cover the pan or casserole with foil. Before I could get skinless chicken (back in the dark ages) I would use skin-on chicken for this dish. The skin next to the bottom of the pan would get sorta crispy; however, if you end up peeling off the soggy skin as I always did, you lose flavor. I much prefer skinless for that reason.

Question: could I make this recipe in foil packets on the grill? You know what, I am going to make our regular chicken. We make about 15 to 20 Marinated Breasts that freeze beautifully. (And) I will make this recipe as well. I am so excited. Freezer will be stocked. Thank you Rainydays for a great new recipe! |

I'm so glad I finally stumbled across this. I make something sorta similar, rolling the chicken in crused french fried onions. My DH loves it but the smell of the onions "frying" in the oven makes me gag. I read him this recipe and he can't wait for me to try it.

Thanks so much for bumping this! I dont have onion soup on me, but I will definitely pick some up. I do however have hidden valley ranch and I will try it with that. |

I don't ever BUY onion soup mix as it's so spendy for so little..so will have to go pull out my onion soup mix recipe and make up another jar full as I think we used up the last of what we had..but I do have a freezer full of boneless skinless chix breasts...if we have power on tomorrow I'll try..if not..I'll make some homemade mac and cheese on the Coleman stove..
