You could bake some (making twice baked potatoes) and then freeze them for future use.

I tried this last week, and it turned out pretty well..if you have a deep fryer, or you can just use a large pot, you can make your own potato chips! I had a ton of potatoes too and I thought that would be fun! Just slice them really thin and fry them up!

I make home made fries all the time! I add fresh rosemary, black pepper, salt, and parm. cheese when they're done cooking. I rarely fry them, I bake them in the oven. YUMMY! Rosemary is AWESOME on potatoes! Make potatoes/green beans. Cut up the potatoes in to chunks, boil until soft. I boil the potatoes with salt, pepper, onions, bacon, and then add the green beans, parsley and a little more pepper! YUM-O It it's not too hot yet, cheesey potato soup with ham Shred them and make hasbrowns |

Cut in big wedges, shake in a baggy with Lipton soup Mix then drizzle with olive oil and bake. Or, just lay on a pan, drizzle with olive oil and sprinkle with kosher salt and cracked pepper. Yum! Cube them up and fry along with diced onion and season to taste. Bake them, cut off the top 1/3 and scoop out the contents. Mix with sour cream, shredded cheese, scallions and seasonings...put back in the shell and bake again until bubbly. Make mashed potatoes...double batch. Use half for one meal then the other half the following day to top a shepherd's pie. Soooooo many options for taters.... |

Ideas: * Potato Crusted Grouper, Talapia, or Mahi or a fish of your choice (see below) * Italian Potatoes marinade (see below) * Add the Potatoes to a Betty Crocker Potato Box Mix. Add extra cheese to the top and broil for a crunch before serving. Great side dish for a family gathering. Freeze the leftovers for a side for another day. Potato Crusted Grouper, Mahi or TalapiaI shred or slice really thin the potatoes and mix with with seasings of choice. Then I prepare Crusted Coated Grouper, or a fish of your choice. Italian Potato Marinade: Boil the potatoes until just firm. Cool slightly. Then slice into large slices (or chunks if preferred). Marinate while still warm with Viva Italian Dressing. Some days we will even toss the larger thick slices onto the grill for extra flavor. Add a little extra right before serving. Great for picnics, this needs no refrigeration. Enjoy! |

Get a pre-made pizza crust top with butter instead of pizza sauce then put about an inch thick layer of mashed potatoes, sprinkle some onions and top with cheddar cheese. bake until hot and enjoy.

i dice potatoes, and put them in a ziploc steamer bag along with a few sprays of i can believe its not butter, some parsley and garlic powder and nuke it for 7 minutes. they taste great and the best part is they are only 100 calories per 1 cup serving.

How about pierogie casserole? 8 ounces lasagna noodles 2 large onions, diced 8 ounces sharp cheddar cheese, grated (2 cups) 4 cups mashed potatoes, made fresh or leftover 4 tablespoons butter Salt and pepper to taste Cook noodles according to package and set aside. Brown the butter in a medium skillet, being careful not to burn. Add the onions and sauté until softened and lightly browned. Combine the cheese and mashed potatoes. Butter or spray a 13x9x2-inch baking dish. Line the bottom with a layer of noodles. Add a layer of potato and cheese mixture then spread with a portion of the onions. Continue to layer the ingredients ending with a layer of noodles topped with onions. Bake at 350° F for 15 to 20 minutes, or until bubbly and lightly browned. Tent with foil if the top browns too quickly This is a heavy dish though, one small slice and you're good to go! You can mix up the cheese too, im not fond of the sharp cheddar so i use mild or american or something like velveeta even works well. |

I make a dish that's basically lasagna but I use sliced potatoes instead of noodles. Just slice the potatoes about 1/4" - I don't peel mine but that's personal preference. Make it the exact way you normally make your lasagna and it's sooo yummy! Lube the pan first. It's also really good using cheddar cheese, golden mushroom or any cream soups or a combo of them.
