Yes I put in 2 cups of water and no it didn't cover the beef..I just took it out..And boy is it tough..Not stringy at all..More like a regular cut of beef...The potatoes were in there as well but they aren't even cooked... |

. I just read the directions on the package, it probably hurt it since it wasn't under the water. Have the potatoes been in there for 4 hrs too?

Thanks for your concern..I solved my St.Pattys day dinner problem..Called my mom who lives 15 minutes away and had her slice some up for my hubby and it's on its way..He loves the stuff and I only make it once a year...

I love the stuff too -- No one else seems to care about it at my house but i could eat it all day. My grandma used to make it and I think it is just a comfort thing. |

I'm so sorry to hear of the death of your corned beef. I think you did overcook it. Next year, go to allrecipes.com and search for Corned Beef and Cabbage. I made that one this year and it was REALLY yummy.

Don't throw out the beef. When I overcooked a ham one year I cut the outer part off (inside was fine) and then ran the outer part through the grinder/processor. Instant bacon bits. Try it with the corned beef you overcooked. Maybe you can use it on salads or even make a sandwich spread out of the ground/shredded corned beef.
