I am looking for recipes for homemade cakes. My favorite cake is Red Velvet. Growing up I never hung out in the kitchen so I never learned to "Really Cook." Over the past 6 months I've gotten hooked on watching the Food Network channel. I just purchased a KitchenAid stand mixer and a food processor. Lately I've been cooking 2-3 recipes from their website every week.

This is a friends recipe: Red Velvet Cake For the Red Velvet Cake: 2 1/2 cups all-purpose flour (recommended: White Lily) 1 teaspoon baking soda 1 teaspoon cocoa 1 1/2 cups granulated sugar 2 eggs 1 1/2 cups canola oil 1 teaspoon vinegar 1 (1-ounce) bottle red food coloring 1 teaspoon vanilla 1 cup buttermilk For the cream cheese frosting: 1/2 cup margarine 1 (8-ounce) package cream cheese 1 box confectioners' sugar, sifted 1/2 teaspoon vanilla 1 cup chopped lightly toasted pecans For the Red Velvet Cake: Preheat oven to 350 degrees F. Grease and flour 3 (9-inch) round layer cake pans. Sift flour, baking soda and coco together. Beat sugar and eggs together in a large bowl. In a separate bowl mix together oil, vinegar, food coloring, and vanilla. Add to the bowl of eggs and sugar and beat until combined. Add the flour mixture and the buttermilk to the wet mixture by alternating the buttermilk and dry ingredients. Always start with the flour and end with the flour. Pour batter into pans. Tap them on the table to level out the batter and release air bubbles. Bake for 25 minutes or until a cake tester inserted near the middle comes out clean but be careful not to over bake or you'll end up with a dry cake. Let layers cool on a wire rack for about 10 minutes before turning out of pan. Cool completely before frosting. For the cream cheese frosting: This is the "official" cream cheese frosting recipe but we always use about 1 1/2 recipes on each cake to cover it well. Let margarine and cream cheese soften to room temperature. Cream well. Add sugar and beat until mixed but not so much that the frosting becomes "loose". Add vanilla and nuts. Spread between layers and on top and sides of cake.

I may give this a try this weekend since I have majority of the ingredients. If so I'll let you know how it turned out. Anymore homemade cake recipes? No coconut please.

I have never had Red Velvet cake before, I think I might try to make it. Generally my idea of making a cake involves opening the box and following the directions.

If you want a lighter cake, I've always switched the oil for applesauce. It still turns out moist and wonderful but doesn't leave that residue on your fingers and tongue. I've never had a bad experience switching the ingredients and I've done it, I'm sure, over 100+ times.

Black Walnut Pound Cake: 2 sticks butter 2 cups sugar 3 eggs 3 cups plain flour 2 teaspoon baking powder 1 cup milk 1/4 teaspoon salt 1 teaspoon vanilla 1 cup black walnuts 1/2 teaspoon black walnut extract (optional) Cream butter, sugar, and eggs. Sift Flour, baking powder and salt and add to creamed mixture then add milk and flavoring. Coat nuts with flour to keep them from floating to the bottom and add them to the mixture. Bake at 325 for 1 hour DELICIOUS

Chocolate Applesauce Cake 1/2 cup oil 1 3/4 cup sugar 16 oz can applesauce 2 cups flour 3 Tbs cocoa 1 1/2 tsp. baking soda 1/2 tsp salt 1/2 tsp cinnamon mix all ingred. till well blended, pour int 9 x 13 pan sprayed with Pam Top with 1 cup chocolate chips and sprinkle 3 Tbs. sugar over all Bake at 350 for 30 - 35 minutes I made this for a youth group outing this weekend and didn't realize I was out of chocolate chips. I just sprinkled the sugar on top and no one knew any better. I love it because I don't need any eggs for this. |

I know you want homemade but have you tried the Cake Mix Doctor cookbook? I LOVE it and use it all of the time for bake sales, etc. Everything starts out with a cake mix but you make different additions. AND I LOVE my kitchenaid stand mixer! I have had it for 20 years and it still looks new. Also try Allrecipes.com I like this site too! Have fun with your mixer. |

I have another just regular everyday type cake that we make most birthdays and Sunday dinners also church gatherings, goes over wonderful. MAKE CAKE IN A TUBE CAKE PAN 1 Box White Duncan Hines Cake Mix 1 cup thawed and drained strawberries (reserve 1/4 cup for icing) 1 cup Mazola oil 2 Tablespoon Self Risin Flour 1/2 cup Water 4 Eggs 1 Box Strawberry Jello (or wild strawberry jello) MIX ALL ING. (EXCEPT THE 1/4 cup of strawberries that you reserved) TOGETHER WITH MIXER AND POUR INTO GREASED AND FLOURED TUBE CAKE PAN Bake at 350degree for 1 hour. icing: 1 stick margarine (do not melt, use at room temp) 1/4 cup strawberries (NO JUICE, DRAIN VERY WELL OR ICING WILL BE RUNNY) (just use enough of the berries to make the icing the consistency you want for spreading.) Wonderful!!!!!!!!

this thread is totally not good for my diet, but thank you for sharing the recipes. I love to bake and always like new recipes. I love the Pioneer womans BEST CHOCOLATE SHEET CAKE EVER link to the cake with pictures Pioneer Woman Chocolate Sheet Cake Combine in a mixing bowl: 2 cups flour 2 cups sugar 1/4 teaspoon salt In a saucepan, melt: 2 sticks butter Add 4 heaping tablespoons cocoa. Stir together. Add 1 cup boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool. In measuring cup, pour 1/2 cup buttermilk. Add: 2 beaten eggs 1 teaspoon baking soda 1 teaspoon vanilla Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes. While cake is baking, make icing: Chop 1/2 cup pecans finely. Melt 1 3/4 sticks butter in a saucepan. Add 4 heaping tablespoons cocoa, stir to combine, then turn off heat. Add: 6 tablespoons milk 1 teaspoon vanilla 1 lb minus 1/2 cup powdered sugar Stir together. Add pecans, stir together, and pour over warm cake. Cut into squares, eat, and totally wig out over the fact that you’ve just made the best chocolate sheet cake. Ever.
