Kale And Potato Soup

KALE AND POTATO SOUP

1 tbsp olive oil
1 package (16 oz or larger) fresh kale, chopped
2 medium potatoes, peeled and diced
1 onion, diced
2 cans chicken broth
Dash cajun seasoning

Heat oil in large stockpot on high. Add onion and saute til tender, add potatoes and saute 2 to 3 minutes to coat in onion mixture. Add kale and saute another 2 minutes or so. Add chicken broth, bring to boil. Reduce heat to low, simmer covered for 15-20 minutes or until potatoes are tender. Season to taste with salt and pepper. Add dash of cajun seasoning for zing.

Serves 4

Please note: This recipe is tweaked to our tastes and slightly different from original (Wegman's). Also, my hubby prefers smooth soups so I often put this through blender before serving.
