C.B.'s 30 Minute Chili

Ingredients:

1 to 1/2 pound ground beef

1 - 14.5 oz can diced tomatoes or 1&3/4 cups chopped fresh tomatoes

1- 15 oz can light or dark kidney beans, drained

1/2 teaspoon chili powder & 1 teaspoon salt or chili seasoning packet

In a large saucepan - combine tomatoes & kidney beans. Simmer on low heat.

Brown meat in a frying pan on medium heat until it is no longer pink and crumbles. The seasoning mix can be cooked with ground beef or in saucepan.

Drain any excess grease from meat. Put the meat into the saucepan and stir everything together.

This should be ready to eat in 30 minutes. You can serve it with crackers, cornbread, homemade bread, over baked potatoes...

Variations:

1/2 cup chopped onion - you can cook with the meat, in saucepan or add before serving.

Add 1/4 cup chopped green or red peppers in sauce pan or before serving.

Not hot enough: Chop 1/2 or 1 whole habanero and add before serving.

This amount serves 4. Need to feed a larger crowd, double or triple ingredients. It will take a little longer than thirty minutes to make a larger batch.

Note: The C.B. in the title is my dedication to a wonderful friend who introduced me to putting a habanero in chili.

Enjoy!
