Corn Chowder

From the kitchen of Steven Riff (CM_ANGEL's uncle)
Ingredients
1 lb Bacon
1 1/2-2 lbs Cubed Ham
3 lbs Potatoes (cubed)
1 stick of Butter
3 Cans of Creamed Corn
3 Cans of Mexicorn
1 medium onion (chopped)
Salt & Pepper
Cold Beer--Use own judgement

Directions


1. Fry bacon-Let cool & crumble into small pieces.

2. Cube Potatoes & pot boil in about 3 inches of water~Add salt & pepper~Cook til about half done.

3. Don not drain water but use for chowder stock.

4. Add cream corn, Mexicorn, onions, bacon, ham, butter, salt, & pepper.

5. Simmer for at least an hour until potatoes are soft.

6. Drink the beer throughout the entire process & while eating.

YUMMY....making as soon as run upstairs...my picky DS will eat this
one catch...it is vegetarian and we use morningstar farms for the bacon and ham
but it really tastes the same
