New Creation: Vegetable Curry and Rice

My neighbor is a lovely gal who happens to be of Indian orgin, having hated curry my entire adult life, she has completely and radically changed my opinon, as well- she has inspired me to try my hand at Indian cooking. I love the foods of cultures that are rich in spices and creative with the selected ingredients. Brazilian is my favorite, Greek second, Moroccan next... and now Indian. Threw this dinner together today so I would have a meal ready when I got back from couponing. It smelled so good...

Really happy with this recipe! My whole family went back for seconds, including my picky husband who basically hates everything and anything I cook. It was filling and easy and I converted it to a crock-pot recipe. What I like about this one is you can make a lot to go around with few ingredients that also happen to be pretty cheap.

This recipe blew.my.mind. It was easy, it was cheap and it offered a taste unlike anything else. It was fancy without the pomp and fuss and it was soooo darned good!!!!! So good in fact that I the first thing I'm doing as I wake this morning is to share it with you good people. I've had a healthy following with my blog and I'm thrilled to see that, I hope you all enjoy this recipe as much as we did! It was amazing!!!! A perfect choice if you're looking to get out of a dinner rut!

This menu, we have a few roll overs from last week due to late night dad cooking and Halloween parties. We skipped a few nights of dinners but that's ok because I still have the ingredients on hand and they will easily roll over to my menu for this week!

Night 7: Italian Ramen Skillet

This isn't so much of a review as I'm just sharing one of my all time favorite cheap recipes with you that has an option of being meatless which is how I'll post it since this is how I most freqently make it. This was a recipe I modified from meat years ago when I became a vegetarian, I like it better this way. I like this recipe because you almost always have all the ingredients on hand and it costs very little yet it is super filling.
