Review: Caribbean Chicken

Posted 09-07-2014 at 06:26 PM by medic2midwife (Couponing on a medic's dime)

I found this on Hillbilly Housewife after feeling uninspired in the last two weeks with my abundance of poultry. This one left me pretty happy, although I can't say if the kids liked it because they weren't hungry when I served dinner. I will say it is mild enough for children, super mild.

Review: Ham n Greens Soup

Posted 07-10-2013 at 12:10 PM by medic2midwife (Couponing on a medic's dime)

Soup in the middle of summer? Crazy lady! I know, but last night I was feeling under the weather and more than a tad stressed and soup is the ultimate comfort food. I had a hardcore hankering for ham, potatoes and greens so I did a little poking around the internet and found something to work with, then I modified the holy heck out of it! I was so happy with the soup I had two bowls last night and am reheating one today for lunch!

I have dubbed the soup...

Review: Crack Potatoes

Alright, this little bitty isn't exactly frugal...but it was so, so good I wanted to share. Sometimes we're looking for something different to shake things up, a splurge item on that menu perhaps? This is your guy! I made this while visiting my sister-in-law and she and her husband almost devoured the entire pan between the two of them.

When I got home, I despaired at the high fat and calorie content.. trust me, this is not a dish for those on a diet! So I decided I would be the brilliant...

Review: Zucchini Enchiladas

Posted 06-19-2013 at 11:26 AM by medic2midwife (Couponing on a medic's dime)

Alright, I'll start of saying that this isn't so much a review as it is more of a perfected series of tweeks on a recipe I found a while ago and had wanted to try. I like to avoid shopping out of season so I needed to wait until the summer months here in Washington to get my hands on those zucchinis at an affordable price.

I grew up eating zucchini from grandmas garden so it is almost always a summer staple for me. The great thing about this vegetable is that you can easily freeze...

Grandma's Goulash

Posted 06-01-2013 at 05:53 PM by medic2midwife (Couponing on a medic's dime)

This is one of my all time go to comfort foods. I remember my grandma cooking this dish when I was a child, continuing the tradition, I make this for my own children. There are a lot of different ways to make goulash, but this is how she did it.

1 box bowtie pasta or elbow noodles (really, any pasta will do!)- $1.00 or less, free with coupon
1 lb ground meat (turkey is healthier, but grandma used beef) -prices vary- I used clearance organic beef $2.00/lb
1 bag frozen...
