Cake flour vs. all purpose flour ?

I bought some cake flour to make a fancy lemon cake & now have most of the box left & don't plan on making the complicated lemon cake again. If I use the cake flour to make cookies or bread will they turn out ok? Should I possibly mix it with my all purpose flour? TIA

I went online at kingarthurflour.com and chatted with one of their associates. He said that cake flour is NOT interchangeable with AP flour. I didn't ask him specifics but I'm sure if you'd like to know they can help you out. Just click on live chat and they can help you.

I just did a google search. Cake flour has less protein so doesn't end up with a lot of gluten. Don't use it to make bread but it sounds like it is fine for cookies.

What is Cake Flour?

I think I will try mixing an equal amount of cake flour with my all purpose & try to make some cookies & see how they turn out. Thanks.
