Don't have a casserole recipe per se, but here is the recipes I use. (i've modified it from allrecipes)

6 green or red bell peppers
1 pound ground beef (grassfed if possible)
1/3 cup chopped onion
1/3 cup chopped zuchinni
1 (14.5 ounce) can whole peeled tomatoes, chopped
1 teaspoon Worcestershire sauce
1/2 cup cooked brown rice
1 cup shredded Cheddar cheese
2 (10.75 ounce) cans condensed tomato soup
salt, pepper, and garlic powder to taste

Boil the peppers (tops and guts discarded) for 5 mins.

Cook onions, zuchinni and beef thoroughly. Add all other ingredients and simmer for 10 mins.

Add mixture to peppers and top with additional cheese.

Pop in a 350 degree oven for 20-30 mins
