Did you know that cheese really doesn't go bad. If you see a spot of mold or that white stuff you just shave it off and then the rest of the cheese is fine. Just re-wrap it good and do the same thing the next time you see any spots. Of course if it is completely covered or hairy I would throw it out.
I learned this working in a cheese store. That's all they do.
