| BANANA BREAD
1 cup butter
2 cups sugar
6 or 7 ripe bananas
4 eggs, well beaten
3 ½ cups flour
1 tsp salt
2 tsp baking soda
Cream together butter and sugar until light. Add bananas & eggs and mix well. Sift together flour, salt and baking soda. Blend dry ingredients into creamed mixture, being sure not to over mix. Pour batter equally into 2”x4”x8” loaf pans which have been lightly oiled and floured. Bake at 350º for 45 to 60 minutes till toothpick inserted well into middle of center of loaf comes out clean.
